The frosted Ginger-Pineapple mojito

The real mojito rests on a simple idea: fresh ginger that wakes everything up. We take the idea further — instead of adding sugar and grated ginger, we freeze our Ginger-Pineapple into ice cubes. They melt gently in the glass and release the ginger, turmeric and pineapple sip after sip.
What you'll need
- 250 ml of Ginger-Pineapple (as ice cubes, prepared the night before)
- The juice of half a lime
- A generous handful of fresh mint
- Ice-cold sparkling water
The method
- The night before, pour the Ginger-Pineapple into an ice cube tray. Freeze for at least 4 hours.
- Clap the mint leaves between your hands to release the oils, then drop them into the bottom of a tall glass with the lime juice.
- Press lightly — without crushing, or the mint will turn bitter.
- Add the Ginger-Pineapple ice cubes and top with sparkling water.
- Stir, garnish with a mint leaf, and here's to your health.
